This year after all the cooking we did for thanksgiving we realized our least favorite food was actually turkey! For all the hours of prepping and cooking, the turkey was the one food that wasn't worth the time and effort. We found the green bean casserole and stuffing more enjoyable and decided that this was the last year we would cook turkey. Side note: it's just me and my boyfriend so I'm sure if we were cooking for more people the turkey would be appreciated more.
Anyways, with all this leftover turkey we didn't know what to do with it other than turkey sandwiches until it started to rain and turkey soup made chicken noodle style sounded realllyyyyy good.
This turkey soup is cooked exactly like chicken noodle except instead of chicken bits it's turkey and man does it taste really good!! In fact it's a little tastier than if you used chicken, oddly enough. I used simple, minimal ingredients: chicken broth, diced celery, salt and pepper, egg noodles, and of course turkey. Unfortunately I did not have carrots to throw in which would have been amazing. Even adding some potatoes or rice would have been delightful.
So if you have leftover turkey or just feel like eating some soup then this recipe is perfect. It's easy, tasty, and holiday appropriate!
